Maple & Choc Chip Blondies

Seriously guys, get ready to drool. These bad boys are suitable (and loved!) by everyone. Honestly, ticks all the boxes.

INGREDIENTS

  • 2 x Cans Chickpeas, drained

  • 1.5 x Cups Almond Meal

  • 1.5 x Cups Natural Peanut Butter

  • 2 x Eggs OR Chia Eggs

  • 1/4 x Cup Maple Syrup

  • 1 x Tsp Vanilla Extract

  • 1/2 x Tsp Baking Powder

  • 1/2 x Cup Choc Chips (use dairy free)

  • Sea Salt, to sprinkle

METHOD

  1. Pre-heat oven to 160C.

  2. In a food processor, combine the chickpeas, peanut butter, almond meal, eggs, maple, vanilla, baking powder together or until smooth and creamy. Taste and add extra sweetness, if desired.

  3. Spread across a 20cm x 15cm rectangle pan and smooth across. Sprinkle over chocolate chips and bake for 25-30 minutes or until firm. Sprinkle with sea salt once ready.

  4. Slice them up and spread the love far and wide!


Want to make a chia egg?

To replace an egg, I used 1 tablespoon of chia seeds mixed with 3 tablespoons of water and let the mixture sit for 15 to 20 minutes or you can prepare it the night before. Mix the chia seeds and water together in a small bowl and let it sit for 10 - 15 minutes until the mixture becomes gel.
