Maple & Choc Chip Blondies
/Seriously guys, get ready to drool. I’ve perfected the dense ‘blondie’ style of brownie - but with my secret ingredient… CHICKPEAS. Get your fibre hit in this sweet little snack.
INGREDIENTS
400g can chickpeas, drained
1/2 cup natural peanut butter
2 eggs OR chia eggs
1/4 cup pure maple syrup
1 tsp vanilla extract
1 cup almond meal
1/2 tsp baking powder
1/2 cup choc bits/chopped chocolate
Sea salt, to sprinkle
METHOD
Pre-heat oven to 160℃ and line a 20cm x 15cm baking tray with baking paper.
In a food processor, combine the chickpeas, peanut butter, eggs, maple and vanilla. Blitz until well combined and mixture appears smooth and creamy. Stir in the almond meal and baking powder.
Spread across a 20cm x 15cm rectangle pan and smooth across. Sprinkle over chocolate and bake for 20 minutes or until firm. Remove from oven and allow to cool on wire rack, then sprinkle with sea salt once ready to serve.
Slice them up and spread the love far and wide!
Serves 12.
Want to make a chia egg?
To replace an egg, I used 1 tablespoon of chia seeds mixed with 3 tablespoons of water and let the mixture sit for 15 to 20 minutes or you can prepare it the night before. Mix the chia seeds and water together in a small bowl and let it sit for 10 - 15 minutes until the mixture becomes gel.
