Apple & Blueberry Crumble Bars

INGREDIENTS

Base

  • 1 x Large banana, mashed 
  • 1 x Egg, whisked 
  • 2 x Tablespoons oil of choice OR melted butter/nuttelex etc.
  • 2 x Tablespoons honey/maple syrup
  • 1/2 x Cup almond meal
  • 1/2 x Cup desiccated coconut
  • 1 x Cup plain flour
  • 1/2 x Teaspoon of cinnamon 

Crumble Topping

  • 1 x Large Granny Smith apple, thinly sliced
  • 1/3 x Cup frozen blueberries
  • 1/2 x Cup almond meal
  • 1/2 x Cup rolled oats
  • 1/4 x Cup flour
  • 2 x Tablespoons honey/maple syrup/rice syrup  
  • 2 x Teaspoons melted butter OR oil.

 

METHOD:

1. Preheat oven to 180°C. Prepare a 20cm x 12 cm rectangle tin with baking paper. 

2. Begin by preparing the base, in a medium mixing bowl, combine oil, banana and egg and mix well and combined. Sift in flour, and then stir through almond meal, coconut and cinnamon. 

3. Press mixture into prepared pan and smooth over. Top the base with slices of apple and scatter berries over the top. 

4. In a separate bowl, combine honey with oil, rolled oats, flour and almond meal. Mix until little balls appear. 

5. Pour crumble over the top of the slice and press lightly over the fruit. Bake in oven for 30 minutes or until the crumble is well golden and firm to touch. 

6. Turn out onto a cooling rack, then cut into slices.

7. Tell everyone it's disgusting, so you can eat it all yourself ;) 

Makes twelve pieces YUM. 

Adjustments

Looking to make it gluten free? Substitute the flour for almond meal/hazelnut meal and use quinoa flakes in replace of the rolled oats. 

Looking to make it vegan? Replace the egg with another mashed banana and add 1/2 teaspoon of baking powder. Use oil in replace of butter.
