White Choc Rocky Road
/Christmas really is one of the best times of the year! I love locking myself away in the kitchen and whipping up cute little presents (note: edible presents) for everyone. One of my absolute favourites is this White Rocky Road.
It's not #refinedsugarfree #fatfree etc etc... BUT it is delicious and perfect for a little treat every now and then. Remember, Christmas is all about balance and enjoying the things you love with the people you love. Plus, this bad boy is pretty darn sweet, so you'll be sure to get your sugar fix in one small piece. PROMISE.
INGREDIENTS
400g x Plaistowe White Cooking Chocolate Block (don't use melts!)
1/2 cup pistachio kernels, toasted
2/3 cup shredded coconut
300g marshmallows, cut into quarters
2/3 cup dried cranberries
METHOD:
1. Line base and sides of a 4cm-deep, slice pan with baking paper. Melt the chocolate, I use the double boiler method on stovetop, but if time is of the essence, just microwave! Place chocolate in a suitable bowl and microwave on medium for one minute, then every extra 30 seconds until smooth and melted. Stir between each 30 second blitz.
2. Combine pistachios, coconut, marshmallows and cranberries in a large bowl. Pour over melted chocolate. Stir well.
3. Spoon mixture into prepared pan. Refrigerate for two hours. Once it's rock hard, just into teeny- little pieces (roughly 30 or so!)
