Blueberry & White Choc Muffins

  • 1 Cup wholemeal flour

  • 1 Cup plain flour

  • 2 Teaspoons baking powder

  • 1/4 Cup castor sugar

  • 2 Eggs

  • 1 Cup Greek yoghurt

  • 1/4 Cup Oil/Butter (use whatever tickles your fancy)

  • 2 Teaspoons lemon rind

  • 1/2 Cup white chocolate chunks

  • 1 Cup frozen blueberries, thawed


  1. Pre-heat to 180C. Line a muffin tray with 12 muffin cases. Sift the flours and baking powder into a bowl. Add the sugar and stir to combine. 

  2. In a separate bowl, combine the yoghurt, eggs, lemon rind and oil and whisk together. Stir through the flour mixture until just combined. Carefully fold in the berries and chocolate and spoon into the lined moulds. Bake for 15-20 minutes or until cooked when tested with a skewer.
