Don’t get me wrong. Banana Bread is great, but it can be a little… overdone. Love a loaf but want it done differently? Try this, it’s so most and delish.
1 800g can apple slices (in juice)
2 Eggs, whisked
1/3 cup milk
1 teaspoon vanilla extract
1/4 Cup Oil of choice/ Melted Butter (use whatever tickles your fancy)
1/2 Teaspoon cinnamon
1 Cup Self-raising flour
1 Cup Wholemeal Self-raising flour
1/2 Cup frozen blueberries
Pre-heat oven to 180C. Line a medium loaf pan with baking paper. Place canned apple in a medium mixing bowl and mash lightly, some chunks should still remain.
Add in eggs, milk, oil and vanilla and mix to combine. In a seperate mixing bowl sift in flours and cinnamon and make a well. Slowly add the wet mixture into the dry and mix together.
Place in prepared pan and then pour blueberries over the top, press in lightly into the mixture with the back of a spoon. Place in oven and cook for 1h 15minutes.
