Sweet Potato Rostis

The humble veggie patty’s been re-invented and is tasty as hell. The sweet potato is paired perfectly with cumin and coriander.


  • 1 x Large Sweet Potato, peeled and grated

  • 3 x eggs, whisked

  • 2 x spring onions, finely diced

  • 1/4 x cup almond meal

  • 1 x clove garlic, crushed

  • 1 x tsp ground cumin

  • 1/2 cup coriander, roughly chopped

  • Salt and Pepper


1. Place the sweet potato, eggs, spring onions, almond meal, garlic, cumin & coriander in a large bowl and stir to combine. Season to taste.

2. Heat 2 teaspoons of olive oil in a large non-stick frying pan over medium heat. Add 1/4 cup of the mixture and spread evenly. Cook for 3–4 minutes each side or until cooked through.

3. Remove from the pan and cover to keep warm. Repeat with the remaining oil and mixture.
