Dark Choc Chunk & Raspberry Muffins

Back to work lunch boxes looking a little sad? Cheer them up with one of these Dark Choc Chunk Raspberry Muffins. A better-for-you alternative than a lot of pre-made pastries and cafe snacks, well worth a try!

Choc Chunk Raspberry Muffins

INGREDIENTS

  • 1 Cup wholemeal flour

  • 1 Cup plain flour

  • 2 Teaspoons baking powder

  • 2 Tablespoons honey

  • 2 Eggs

  • 1/4 Cup Greek yoghurt

  • 1/4 Cup milk

  • 1/4 Cup oil of choice

  • 1 Teaspoon vanilla extract

  • 1/2 Cup 70% dark chocolate, cut into chunks

  • 1 Cup frozen raspberries

METHOD

  1. Pre-heat to 180C. Line a muffin tray with 9 muffin cases. Sift the flours and baking powder into a bowl.

  2. In a separate bowl, combine the honey, eggs, yoghurt, milk, oil and vanilla and whisk together. Stir through the flour mixture until just combined. Carefully fold in the berries and chocolate and spoon into the lined moulds. Press in some additional berries or chocolate onto top.

  3. Bake for 15-20 minutes or until cooked when tested with a skewer.
