Cherry Almond Squares

I bought a packet of frozen cherries my mistake last week. I thought they were berries and now have a bag to use up. I had no flipping idea what to do with them, but let me reassure you - these Cherry Almond Squares will make you go out and buy a bag ON PURPOSE. I promise, they’re that good.

INGREDIENTS

BASE

  • 1 Egg

  • 2 Tablespoons unflavoured oil or melted butter

  • 2 Tablespoons pure maple syrup OR honey

  • 1 Small banana, mashed

  • 1/2 Cup almond meal

  • 1 Cup flour

TOPPING

  • 1 Cup frozen cherries

  • 1 Tablespoon butter, melted

  • 1 Tablespoon pure maple syrup

  • 2 Tablespoons almond meal

  • 2 Tablespoons rolled oats

  • 2 Tablespoons wholemeal flour

METHOD

  1. Pre-heat oven to 200C/180C. Line a rectangular slice tray with baking paper.

  2. In a medium bowl, whisk together the egg, oil, honey/maple syrup. Add in banana and mix. Add in the flour and almond meal and gently stir until all combined.

  3. Pour mixture into the base of the pan and spread to fill the bottom. Then, add the cherries over the top and lightly press into the base. Place in the oven for 10 minutes.

  4. Whilst the base is baking, prepare the topping; in a small bowl, mix together all the ingredients. Mixture should be crumbly and form little balls, if mixture looks too dry, add a few splashes of mix to combine. Take base out of the oven and pour crumble mixture over the top, press lightly.

  5. Return to oven and bake for a further 30 minutes or until crumble looks light brown and crunchy. Remove slice from tray and place on cooling rack to cool before slicing.
