Banana and Date Muffins


  • 2 x Overripe bananas (mashed)

  • 1 x Tablespoon oil (macadamia, rice bran, coconut - whatever tickles your fancy)

  • 1 x Egg (whisked) 

  • 1/4 Cup milk

  • 1/4 Teaspoon vanilla extract

  • 1/2 Cup almond meal

  • 1/2 Cup wholemeal flour

  • 1/4 Teaspoon cinnamon

  • 3 x Medjool dates, deseeded and finely diced


1. Pre-heat oven to 180°C and prepare a 6 x cup muffin pan, line or oil. 

2. In a medium bowl, combine bananas, oil, egg, milk and vanilla. Whisk together until just combined. Add in almond meal, wholemeal flour and cinnamon.

3. Stir through the dates and pour mixture into muffin tray.  

4. Bake for 15-20 minutes and then allow to cool.
