Rich Raspberry Brownies

These fudgy black bean brownies will not just help satisfy your sweet tooth, they’ll also give a bit of a fibre and antioxidant hit. WIN WIN.

Drool-worthy

INGREDIENTS

  • 1 x can black beans, drained

  • 3 x eggs, whisked

  • 1 x tsp vanilla extract

  • 1/3 x cup oil/melted butter of choice

  • 1/4 x cup pure maple syrup

  • 1/2 x cup almond meal

  • 1/3 x cup cocoa powder

  • 1 x tsp baking powder

  • 1/2 x cup frozen raspberries

METHOD

  1. Pre-heat oven to 160℃ and line a 20cm baking tray.

  2. Place to beans, eggs, vanilla, oil & maple syrup in the bottom of a food processor or blender and blitz until smooth and no chunks remain. Pour into a medium mixing bowl.

  3. Add the almond meal, cocoa and baking powder to the wet mixture and stir until just combined. Pour into lined tray and press raspberries into the top. Bake for 30 minutes or until firm to touch. Allow to cool before slicing into 12 pieces.
