Lemon Passionfruit Loaf

This Lemon Passionfruit Loaf is moist and flavoursome. Balancing the tang of the lemon with the sweet passionfruit pulp leaves a well-rounded flavour. Slice the loaf up and serve with a cup of English Breakfast for the perfect afternoon tea! 

INGREDIENTS

  • 1 cup plain flour

  • 1 cup wholemeal flour

  • 4 tsp baking powder

  • 1/3 cup coconut sugar (or brown sugar)

  • 1/2 cup desiccated coconut

  • 2 eggs, whisked

  • 1/2 cup Light coconut milk (or use milk with 1 tsp coconut essence)

  • 3 tbsp oil of choice (sunflower, olive oil, macadamia etc)

  • 1 lemon, juiced & zested

  • 2 passionfruit, pulp removed

METHOD

  1. Preheat oven to 180°C/160°C fan-forced. Line base and sides of a 10cm x 20cm loaf pan with baking paper. 

  2. In a medium mixing bowl, combine flour, coconut sugar, baking powder and coconut together. Set aside. 

  3. In a mixing jug or bowl, whisk eggs, coconut milk, oil and lemon juice to combine. Add wet ingredients to the dry ingredients and stir gently. Add in passionfruit pulp and stir to combine.

  4. Pour mixture into prepared pan and bake for 60 minutes or until firm to touch. Remove from oven and allow to cool in pan for a further 10 minutes before placing on a cooling rack.

Makes 10 slices.
