Pear & Parmesan Salad

INGREDIENTS

Pear & Parmesan
  • 150g x Baby rocket and spinach mix

  • 2 x Ripe pears, thinly sliced

  • 100g x Thickly shaved parmesan

  • 1 x Avocado, sliced

  • 2 x Shallots OR 1/2 Red Onion, thinly sliced  

  • 2 x Tablespoons extra virgin olive oil

  • 1/2 x Lemon, juiced

  • 1 x Tablespoon Dijon mustard

  • Salt and Pepper

METHOD:

1. Place lettuce leaves, pears, parmesan, avocado and shallots in a large salad bowl. 

2. Place oil, lemon juice and mustard in a screw-top jar. Secure lid and shake to combine. 

3. Add dressing to the salad and toss to coat, feel free to add more parmesan, you can't go wrong.
